Instructions

  • 1. To perfectly boil the corn on the cob, husk the corn, pull off the silky threads, and cut out any blemishes with a pointed knife. Boil water in a pot with a teaspoon of sugar and a pinch of salt. Now drop the corn into the water. Cover the pot and let the water return to a boil again, then turn off the heat and keep the pot covered. The corn should turn soft in 5 to 10 minutes depending on the size and quality. Drain the water from the pot once the corn is soft enough and let it cool down. Now split the corn vertically to obtain two equal halves with the cob and grill it in the microwave for 2 minutes. Keep it aside.
  • 2. In a mixing bowl, add tomatoes, red onion, mint leaves, green chilies, half a teaspoon of salt and a little grounded black pepper. Now add the olive oil and mix them well.
  • 3. Put the corn on a plate and then pour the above mixture on it. Now make fine slices of the soaked almonds and sprinkle over the salad. And finally, add the lemon juice. A light and tangy salad is ready to be served.
